Some people have asked me what is the difference between Ceylon Cinnamon and Cassia🤔 Cinnamon? or why is the one in Ceylon considered the best?

Ceylon Cinnamon has a more brownish color and a sweeter and more delicate flavor than Cassia Cinnamon (or Chinese cinnamon).
Cassia Cinnamon has a large amount of coumarin, coumarin is an organic compound that in the plant world has a defense function against predators, if we ingest it in a small quantity it does not pose any problem but consumed in excess it can cause liver and kidney problems It also has an antagonistic effect on vitamin K, so in case of injury it carries a risk of bleeding.
So that's why Ceylon Cinnamon is considered the best.
